Abstract
Fenolni spojevi su jedni od najvažnijih, u vodi topivih antioksidansa prisutnih u biljkama. Zahvaljujući svojoj specifičnoj kemijskoj građi ova grupa sekundarnih biljnih metabolita posjeduje višestruka biološka djelovanja od kojih je posebice značajna njihova antioksidacijska aktivnost koja se pripisuje položaju, strukturi i broju– OH grupa. Cilj ovog rada bio je odrediti antioksidacijsku aktivnost fenolnih kiselina iz podgrupe derivata cimetne kiseline (p-kumarinska, ferulinska, sinapinska, kava i ružmarinska) i derivata benzojeve kiseline (galna, protokatehinska, vanilinska, siriginska i gentisinska) metodom određivanja sposobnosti inhibicije radikala kisika (engl. Oxygen Radical Absorbance Activity, ORAC). Rezultati ovog istraživanja potvrđuju razlike u antioksidacijskoj aktivnosti između odabranih fenolnih kiselina, a na osnovu dobivenih rezultata može se zaključiti da je najbolju aktivnost pokazala ružmarinska kiselina, a najslabiju p-kumarinska i galna kiselina. Položaj i broj reaktivnih skupina u molekuli ne može se u potpunosti povezati s antioksidacijskom aktivnosti.
Abstract (english)
Phenolic compounds are the one of the most important water soluble antioxidants present in plants. Thanks to their specific chemical structure, this group of secondary plant metabolites possess multiple biological activities such as antioxidant activity which is usually attributed to the position, structure, and number of -OH groups. The aim of this study was to determine the antioxidant activity of phenolic acids from the group of cinnamic acid derivatives (p-coumaric, ferulic, sinapic, caffeic and rosmarinic) and benzoic acid derivatives (gallic, protocatechuic, vanilic, siringic and gentisic) by Oxygen Radical Absorbance Activity assay (ORAC). The results of this study confirmed variations amongantioxidant activities of investigated phenolic acids. Based on the obtained results, it can be concluded that rosemarinic acid (ester of caffeic acid) showed the best activity, while the lowest was detected for p-coumaric acid and gallic acid. The position and the number of reactive groups in the molecule can not be fully associated with antioxidant activity.
